Valentine's Day is the perfect opportunity to make yourself or the people we love happy. And since love passes through the stomach, this treat will be the perfect choice. Cupcakes have a beautiful pink color. In addition, they also stand out for their great taste and perfect composition. Thanks to this, they will certainly please all fitness enthusiasts and supporters of a healthy lifestyle.

We will need it for the dough

    • vanilla flavor drops to taste
    • pinch of salt
    • 2 eggs
    • 4 tablespoons of rapeseed oil
    • 10 g of beetroot powder
    • 12 g of baking powder
    • 60 g of vanilla protein
    • 130 g spelled smooth whole grain flour
    • 130 g plain flour
    • 240 ml of low-fat milk

    We will need it for decoration

      • vanilla flavor drops to taste
      • 5 g of beetroot powder
      • 10 g (1 package) whipped cream thickener
      • 15 g of white chocolate for sprinkling
      • 35 g of dark chocolate 90%
      • 200 g of soft low-fat cottage cheese

      Preheat the oven to 180°C and prepare a muffin tin, which we line with silicone or paper cups. If we don't have them, spray the form with at least oil in a spray. Then we start preparing the dough. Mix both flours, beetroot powder, protein, baking powder and a pinch of salt in a bowl, mix everything thoroughly. Then add eggs, milk, oil, vanilla flavor drops and mix until everything is combined and a smooth dough is formed. Divide this into prepared cupcakes. Fill each approximately ¾. This way we should get 12 pieces.

      Place the prepared form with the cupcakes in the heated oven and bake for 20-30 minutes. Use a skewer to test whether they are cooked. When we pull it out dry after inserting it, we are done. After baking, take them out and let them cool.

      While the baked cupcakes are cooling, we will prepare the decoration. Melt 35 g of dark chocolate in a silicone bag in a microwave or water bath. Then let it cool slightly so that it remains liquid. In another bowl, mix the cottage cheese with vanilla flavor drops and beetroot powder (5 g). Then mix in the cooled chocolate. Next, add whipped cream stiffener according to the instructions to make the cream stiffer and easier to work with. We mix everything, taste it and possibly add flavor drops. Put the cream in a pastry bag and decorate all the cupcakes. At the end, we sprinkle them with grated white chocolate and we're done.
